Hi, Syschka, No, don’t toss it! I made a bitter orange ferment and just made a plum/grape one (delicious). The bitter orange has a regular orange in it, too. No matter how much sugar I add, it still has a strong taste and it does have an alcohol effect when I drink even I tiny bit (felt drunk on 1/2 t.!) , but, it doesn’t have yeast and also in about 30 minutes my stomach becomes active so I know the probiotics are working! Twice, I made a banana/coconut one and didn’t like it myself. I probably could have taken it if it were cold. I always use a clean spoon, but Dr. Cassar just drinks out of the jar. If I were to take a banana one, I would spoon into a “shot” glass (2 ounce, for cocktails) and refrigerate. But that is just me 🙂 The plum/grape one is always fizzing when I open it. (I posted a humorous story). On the side, I tried to make some Kahlua and Vodka (with yeast) (for cleansing solution). The Kahlua was a disaster and the Vodka smells like beer. I may try to make a coffee ferment because it is so much easier. I’ll let you know~! Mahalo!

You’ve been trying some interesting stuff! and giving me ideas.
I will try other ferments and see how it works. Maybe i will also keep a closer eye on the ferments and taste them within a day or two then i can drink them before they become too alcoholic…
I’ll let you know how it works out. And do keep me posted on your experiences with coffee and the Vodka!
I sure will! And Dr. Cassar did say that the banana ferments make in one day! I actually really liked it at first and then something happened and it got yeasty. By the way, I didn’t have any probiotic pills, so I used some juice off some store brand yogurt. Later added a tiny bit of Greek yogurt (not as sour), and some Dannon so I think I have a variety of cultures to culture from. I may start the coffee one if I can get some coffee beans. Vodka is made with potato, so I may try a potato ferment (very small batch!). Please let me know how yours turn out 🙂 Mahalo (thank you!)
