    Here is another favorite recipe for THAI CURRY CHICKEN without the CHICKEN. It comes from a restaurant that used to be in Destin, Florida called “Thai Delights”.
    Simmer and steam (or Marinate Overnight, if RAW, add some fulvic acid or rice wine vinegar to soften) in coconut butter or olive oil (olive oil adds some color to imitate chicken), and water: cooked chicken (or make dish taste like chicken with poultry seasoning or sage or “parsley, sage, ROSEMARY, and thyme” (that’s how I remember it, from Scarborough Fair (song).) Sole salt. A bouillon cube (not made with chicken). One large zucchini, sliced thin, some potatoes sliced, (I don’t know how to prepare them without cooking to tenderness), a little bit of carrot for flavor. When veggies are soft, add about 1 1/2 c. coconut milk and heat. Add something that has a fishy flavor, like seaweed or juice from a can of tuna. ADD SOME CANNED GREEN OR RED CURRY SPICE. I keep mine in the freezer. It lasts for YEARS. Stir in one bit (about 1/4 tsp) for mild, more for spicier. It will color the coconut milk slightly At Thai Delights you tell them 1 through 5. It will be like soup. I guess up to 116 degrees is ok if you are doing RAW. Serve over cooked white rice (put in a long bowl) or soaked rice (mold into a small Chinese bowl and dis-mold onto the serving plate. (please find safe rice soaking recipe on internet). Serve with a beautiful garnish of ribbon sliced carrot rolled with a toothpick and soaked overnight in ice water, halved slice of lime, halved slice of orange. Hot Jasmine tea (did you know it is made by layering green tea with jasmine flowers on a sheet in the sun, and then removing the flowers?), Some cream cheese (without the crab) rangoons with sweet/sour vinegar sauce, a vegetable egg roll. AND FOR DESSERT: In a glass goblet, layer cold “sticky rice” with a scoop of vanilla icecream (or frozen icecubes made with sweetened coconut milk pureed) with coconut milk poured over and topped with a palm seed (looks like a slippery white jelly bean.) I hope it turns out!

    • by “long bowl” I meant individual chafing dish, if desired. Some people like to add bits of rice as they eat the curry as soup, and some like to pour all the rice into the soup and make it less juicy. I just think it looks pretty separated 🙂

    • If I remember correctly, there was also some coconut flakes on top of dessert! YUM
