Athena’s Red Beans and Rice~ Bear in mind I cook this, but I’m trying to adapt for a raw diet here and HAVE NOT TRIED the alternative! (could the RAW CHEF do that?)
Soak 1 lb. dried red kidney beans overnight or boil in 12 c. waterfor 1 hr., let set for 1 hr., and cook for about 1 hr. or until soft(I put 2 aspirins in the water to soften quicker because I don’t have my fulvic acid) 2 c small cubed tomatoes, 2 T sole salt. 1 T. imitation bacon bits for smoky flavor (or maybe a few drops of Figaro smoke flavor). 1/4 c. red white vinegar (or white vinegar with a little red wine, or balsamic vinegar or watered down apple cidar vinegar), 1/4 t. Tabasco sauce (fermented chili sauce) to taste (RAW? Soak instead of cook until water is absorbed and pour off any excess, in fridge overnight or 24 hrs.) I saw Dr. C soak beans until they sprouted. Maybe this has to be done before the the added ingredients.
Separately in a small saucepan, saute 1/2 green bell pepper, 1/2 stalk celery (with tops) and(1/2 c) red onion and 2 T. minced garlic (or omit garlic if you don’t want to have your left and right brain out of alignment, but the flavor definitely “adds”) in “butter” or coconut oil with sole salt plus turmeric. (RAW? Mix up beforehand and add to bean mixture) CHILL overnight or at least 24 hrs. to blend flavors.
SERVE OVER:
Steamed white rice with 1 t. sole salt (1 c. uncooked rice, sole salt. RAW? Not a clue. Maybe rice noodles soaked???) I guess if there is no way to use cooked rice, you could omit rice). I steam rice in 2 qt. bowl lightly covered in microwave by bringing to a boil (5 minutes) and letting sit until rice has absorbed liquid. My microwave is a higher power one so it may take 10 to 20 in a smaller oven. Check every 5 minutes.To serve: Cooked: Arrange Rice on plate or in a large soup bowl, and ladle beans over. Good with French bread and Spinach Salad.
RAW: Arrange Rice on plate or in bowl and top with the chilled bean mixture. Or serve without rice and break Dr. Cassars recipe for flax crackers (or as mine turned out “Pitas”) over it or on the side. Serve with iced black tea, sweetened with Splenda.
If using cooked recipe and served hot over rice, make sure there is a lot of juice. That’s the best part!
TIP: if you want to de-gas the beans, add a pinch of baking soda to the cooking or soaking process. Vegetarian tip: It takes 2 proteins (like beans and rice) to make a complete protein. Flax crackers or pitas would probably count.
Garnish tip: you can make a tiny mountain of white rice on top of the cooked red beans.
Forgotten ingredient! Sugar. About 1 T. in the cooking water. You’re not supposed to heat Stevia (I don’t think) but maybe it could be added to the RAW beans before serving.
