How did it turn out?, I have made the pineapple kombutcha quite a few times, also veggie kraut, it is quite good…..
I put apples, pears, two dates, cinnamon, allspice, nutmeg in a mason jar, I used a base of juiced celery for water, added moringo powder and nettle powder(both from earthshiftstore), added yogurt lactobaccilis started kit. I was experimenting without salt. The reason is that I do not like cabbage that much and I thought I would try softer foods for better texture. And I loved it. In only two to three days on my counter I had fermented fruit with no salt. I used the proper lid for fermenting in found on amazon. I’m gonna experiment more too.
I have cut added salt out of my diet.
I did get the organic fruit at store.
