I have a question about Ferments. If a banana/coconut ferment starts to smell like YEAST and not like banana/coconut, is it ruined? I didn’t feed it sugar for a long time because I thought that it was sweet enough. Should I throw it out and start again? Thank you

For about 2 1/2 weeks, I have been making a kumquat/orange slice ferment with a starter of coconut milk, yogurt, and red wine. I sort of regretted the wine because maybe it has an ingredient that supresses fermentation? I added an ounce of sugar about every 3 days. In the video Making Probiotic Bacteria with your own DNA Dr. Cessar said that he started out with 40 strains of bacteria. How do I do that? It is the video making the probiotic bacteria with coconut and golden berries. I sent them an e-mail with the question.
